First off, I’m so glad that we are all on the same page as far as avocados are concerned! I knew when I was writing my last post that most of us are fans, but didn’t expect that every commenter would say that you love ‘em! I guess I was expecting an “eh” or two.
I also was not expecting more of you to mention that avocados are great on toast – and here I was, thinking I could take credit for the idea. I was actually feeling inspired to make toast with avocado and a poached egg for breakfast this morning because of that … but then I woke up still tired and unrefreshed this morning. So, I did something I haven’t done in a long while. I call it “lazy morning oats”
Boil 1 cup water in microwave (this takes 3 minutes in my microwave). PS – note the time in this picture. I had 12 minutes to make breakfast, pack my lunch, comb my hair, brush my teeth, put my shoes on, and get out the door this morning. I’ll tell you how that worked out in a minute.
Measure 1/2 cup oats into a portable container with a lid. I used an empty (and clean) nut butter jar.
Pour hot water over oats. Stir once, then close the container. Allow to sit for about 5 minutes (this is the opportune moment to tend to brushing of the teeth, combing of the hair, etc. as mentioned above.)
At this point, the oats will have absorbed most of the water. If you want to add toppings, you can do so now and they will warm … a little. I sliced up a chicken sausage. Then, grab the jar, the lunch you haphazardly threw together, your purse, and car keys, quickly slide on your slip on shoes, and run out the door just in time. Do be careful as you run down the stairs of your building as you are holding a jar containing very hot water and excessive shaking may result in spilling hot water all over your hand and the stair.
And, voila!
You now have a relatively warm portion of oats with a slightly waterlogged chicken sausage to eat while booting up your computer.
Hopefully I’ll give myself enough time for avocado topped toast tomorrow.

Chicken sausage on oats!?!?! Thats the part thats boggling my mind right now… Ive barely worked up to the idea of oats without maple syrup..
