I have a preference when it comes to my eggs – WELL DONE. Runny yolks make me gag. (GFBF likes his yolks runny, but then he also likes to exclaim “I like to eat the unborn!” whenever he eats eggs). So I prefer my eggs one of two ways to ensure yolk doneness – scrambled or hard boiled. But since I eat eggs for breakfast six days out of the week, I got burned out on both fast and decided it was time for a change. Like poached eggs.
I found Smitten Kitchen’s instructions, and was determined that this would be easy. I was quite wrong.
I “poached” six eggs, ending up with two that were actually edible, before I decided I was going to have to find a better solution. And then I remembered – I have an egg poacher! GFBF bought me a new toaster for Christmas (I had to get rid of my old one that was full of gluteny crumbs), and it has an egg poacher attached.
This is one of my new favorite breakfasts, especially because the eggs look like little flying saucers:

Veggies sauteed in ghee, with two poached eggs and chopped basil.

I’ve never tried to make poached eggs – they scare me!
But I’d love to. I also don’t have anything against runny yolks, just against runny egg whites. Eek.
